Grilled Lemon-Herb Chicken with Orzo
Ingredients:
4 boneless chicken breasts
1 tbsp olive oil
2 tsp dried oregano
1 tsp garlic powder
1 lemon, zested and juiced
Salt and pepper, to taste
1 cup orzo pasta
2 tbsp butter
1/4 cup fresh parsley, chopped
Directions:
Preheat grill to medium-high heat. Season the chicken breasts with olive oil, oregano, garlic powder, salt, pepper, and lemon zest.
Grill the chicken for 6-7 minutes per side until fully cooked. Squeeze lemon juice over the chicken before serving.
Meanwhile, cook the orzo according to package instructions. Drain and return to the pot.
Stir in butter and fresh parsley, and season with salt, pepper, and a little extra lemon juice.
