  • This is our Regular Chinchin Recipe
    FANTAstic Crunchy and sweet Chinchin is here

    Recipe:

    1. Flour 500g

    2. Fanta, 1cup

    3. Egg 1

    4. Salt 1tsp

    5. Sugar 1/4cup

    6. Butter 30g

    7. Milk Flavor, 1 sachet

    8. Baking Powder 1/4 tsp

    Mix all the dry ingredients together
    Add Butter and Stir together till you get bread crumbs

    Add your egg and mix together
    Then add the Fanta and mix
    Add water, start with 1cup ,mix together if you need to add a little more, add but make sure the dough is not runny or sticky.

    Knead your dough or work your dough a little for 5mins,allow it to rest a bit

    After 5mins of resting
    put your dough on your worktable/board
    cut it into 5

    roll out each of the dough flat and cut into different shapes and fry on medium heat
    Allow it to cool before covering
    Enjoy

    I could have used palm oil for this but some of my household members don't like palm oil

    Ingredients:
    -Goat meat (optional)
    -Grounded Crayfish
    -Fresh Tomatoes
    -Fresh Ata Rodo
    -Fresh Red Chilli Known As Shombo
    -Fresh Scent Leaves
    -8 Small Size Ogiri Okpei Depending on the size of your pepper blend
    -3 Medium Size Onions
    -Dried Catfish
    -Vegetable Oil
    -Seasoning Cubes
    -Home-Made Spice (Spring Onions, Garlic & Ginger)
    -Salt to taste

    Method:
    Cut your protein in any size of your choice, wash meat using salt and water then parboiled using powdered or fresh ginger and garlic mix, set aside (I didn't keep my goat meat stock cause I don't like goat meat stock but you can use your meat stock)

    Roughly blend your washed pepper, fresh red chilli and tomatoes, then set aside.

    Soak dried catfish in salted hot water, pour away after some minutes, then washed using normal water to remove dirt, deboned and set aside.

    Slightly roast the ogiri okpei before grinding in a small mortal using pestle.

    Washed and slice onions to prefer size, set aside and also roughly blend the crayfish, set aside.
    washed and slice the scent leaves, set aside.

    Pour vegetable oil into a pan or pot, set on medium heat.When the oil heats up, fry the goat meat(optional) set aside.

    Add chopped or sliced onions, saute for some minutes.

    Then add roughly blend pepper and tomatoes mix and stir on medium heat

    Also add seasoning cubes,homemade spice and salt to taste, leave to fry on medium heat for 20 minutes, remember to stir every now

    Add the washed slice scent leaves, goat meat and stir to incorporate very well, allow to cook for some minutes.

    Add the washed dried catfish...

    You can also add your meat stock, then stir to incorporate very well.

    Allow to cook on low heat, leave for some minutes.

  • HOW TO MAKE PLANTAIN PUFF

    RECIPE:
    1 over-ripe plantain
    3 heaped tablespoons plain flour (all purpose flour)
    2 teaspoons fast action yeast
    8 tablespoons warm water
    Habanero pepper (to taste)
    Salt (to taste)
    Vegetable oil (for frying)

    NOTE: The vegetable oil should be about 3 inches deep when poured into the pot.
    You can use cayenne pepper (fresh or dry) in the absence of Habanero pepper. The dry one needs to be ground into powder before use.

    DIRECTIONS:
    Mix the fast action yeast with the warm water making sure there are no lumps. Cover and set aside.
    Peel the overripe plantain and mash with a fork till a good blend is achieved. Set aside.
    Sift the plain flour and the salt into a sizeable bowl. Mix thoroughly.
    Add the yeast solution and stir till you get a medium consistency. If it is too thick, add a few more tablespoons of warm water and mix till you get a medium consistency.
    Add the mashed plantain. Mix with a spatula till well incorporated.
    Cover with aluminium foil. Leave in a warm place to rest for 10-15 minutes.
    After that time, you'll notice that it a bit fluffy.
    Beat the batter with a spoon then add the habanero pepper (cut into pieces). You can also use cayenne pepper.
    Heat some vegetable oil in a pot. The oil should be about 3 inches deep. The oil is hot enough when a small quantity of batter dropped into the oil sizzles and quickly comes to the surface of the oil.
    Scoop small amounts of the batter into the oil using your finger tips. Watch as they sizzle, come up to the surfaces of the oil and puff up.
    Stir constantly till golden. Reduce the heat if you think the plantain puff are browning too quickly. This is to ensure that the inside is well cooked by the time the outside browns.
    When done, transfer to a paper-lined sieve to drain. And serve
