    SOME KITCHEN TIPS THAT MIGHT HELP YOU.

    (1) If you don't want your seasoning cubes to get soft and start bringing out water....add garri to the container where you put your seasoning cubes. It wilk remain strong and fresh.
    (2) Don't throw away your left over pounded yam. Dry it and crush it. After its dried then use it to eat beans....its a great taste.
    (3) if your pot of soup sour or changes taste. Put 2-3 pieces of charcoal in it and warm very well....you will recover the delicious taste again.
    If your shoe is smelly....add piece of charcoal, it will absorb the smell.
    (4) If wall geckos are disturbing you in your house, put fresh egg shells on your windows and doors where they come in. It will all run out from your house.
    (5) Add a pint of salt to your boiling water.....it makes it boil faster.
    (6) When cooking your stew, always use ginger and garlic to boil your meat....it give the stew super taste.
    (7) Put water inside a burnt pot and cook for some minutes....the hardness will be soften and ready to be washed easily.
    (8) To prevent your yam from getting spoilt after you might have cut them. Apply palm oil to the remaining half.
    (9) Rub salt on your pilled onions before cutting it to avoid peppering your eyes.
    (10) To kill ants and other micro animals in your kitchen....mix salt, water and detergent then spray. Note....cover your pots and plates before spraying.
    (11) Add little palm oil in your boiling water before adding your WHITE garri....it turns it to YELLOW garri.
    (12) If hot water pour on your body, spray flour on the affected body part. It will not bloat up but rather it will dry and heal up without scar.
    (13) To make your WHITE PAP to turn YELLOW PAP....add a little drop of palm oil while dissolving the raw pap.
    (14) Add a little groundnut oil in your hot water for eba....it will prevent it from sticking to the bowl while stirring.
    (15) If you have ripe tomatoes and you don't want them to get rotten....take lemons and mix with the tomatoes. They will stay longer.
    (16) If your food is over salty when cooking....peel potato and cut it into the food. It will absorb the salt.
    (17) When you've already used oil to fry fish and you wanted to re-use it and cook a diffrent meal without having the fish smell....just peel garlic and drop
    inside the oil....the smell will disappear.
    (18) If you want to turn PALM OIL to GROUNDNUT OIL....just bleach it with fresh ORANGE LEAVES.

  • My venturing into subsistence agriculture is one of the best things I did this year.

    I grew potatoes,corn,cassava,peppers,tomatoes,ugu,
    green,okra... Even trees.

    My Christmas broiler was so big,as a first timer, I am very proud of myself. Only one gave more than 40 pieces of BIG cuts.

    Catfish raised at home also served for dried fish,fried fish,barbecue and pepper soup.

    The highlight for me was the Noilers/Kuroilers (3weeks old)and native hens we got in August. All three females are laying for us now every day!

    Except the one that is raising her chicks,the other two wake up every morning and drop eggs

    This one in the picture started laying at 20 weeks old. The day she dropped the first one,I was beyond ecstatic All my weeks of feeding and expectation

  • HOW TO COOK NIGERIA JOLLOF RICE

    Ingredients

    1/3 cup oil (vegetable/canola/coconut, not olive oil)

    6 medium-sized fresh plum/Roma tomatoes, chopped, OR a 400-gram tin of tomatoes

    6 fresh, red poblano peppers (or 4 large red bell peppers), seeds discarded

    3 medium-sized red onions (1 sliced thinly, 2 roughly chopped), divided

    1/2 to 1 hot pepper, or to taste (yellow Scotch bonnets are my favourite)

    3 tablespoons tomato paste

    2 teaspoons (Caribbean/Jamaican-style) curry powder

    1 teaspoon dried thyme

    2 dried bay leaves

    5 to 6 cups stock (vegetable, chicken, or beef) or water, divided

    2 teaspoons unsalted butter (optional), divided

    4 cups uncooked converted long-grain rice or golden sella basmati, rinsed

    Salt, to taste

    Black and white pepper, to taste

    Extra: sliced onions, tomatoes

    Directions

    In a blender, combine tomatoes, red poblano (or bell) peppers, chopped onions, and Scotch bonnets with 2 cups of stock, blend till smooth, about a minute or two. You should have roughly 6 cups of blended mix. Pour into a large pot/ pan and bring to the boil then turn down and let simmer, partly covered for 10 - 12 minutes

    In a large pan, heat oil and add the sliced onions. Season with a pinch of salt, stir-fry for 2 to 3 minutes, then add the bay leaves, curry powder and dried thyme and a pinch of black pepper for 3 - 4 minutes on medium heat. Then add the tomato paste - stir for another 2 minutes. Add the reduced tomato-pepper-Scotch bonnet mixture, stir, and set on medium heat for 10 to 12 minutes till reduced by half, with the lid partly on. This is the stew that will define the pot.

    Add 4 cups of the stock to the cooked tomato sauce and bring it to boil for 1 - 2 minutes.

    Add the rinsed rice and butter, stir, cover with a double piece of foil/baking or parchment paper and put a lid on the pan—this will seal in the steam and lock in the flavor. Turn down the heat and cook on the lowest possible heat for 30 minutes, stirring half way through.

    Stir rice—taste and adjust as required. If rice isn't soft enough/ needs additional cooking, add 1/4 to 1/2 cup of stock or water, stir through and continue to steam, on low till cooked through.

    If you like, add sliced onions, fresh tomatoes and the 2nd teaspoon of butter and stir through. Let rest, covered for 5 to 6 minutes.

    To make Party Rice, you'll need one more step. Now Party Rice is essentially Smoky Jollof Rice, traditionally cooked over an open fire. However, you can achieve the same results on the stove top. Here's how: Once the rice is cooked, turn up the heat with the lid on and leave to "burn" for 3 to 5 minutes. You'll hear the rice crackle and snap and it will smell toasted. Turn off the heat and leave with the lid on to "rest" till ready to serve. The longer the lid stays on, the smokier. Let the party begin!
